IHG Dim Sum Chef De Partie 面点主管 in Xi'an, China

  1. 负责中厨房面点部门的日常生产管理,统筹面点品类(如包子、馒头、饺子、糕点、广式点心等)的制作、出品质量与出餐时效;
  2. 制定并优化面点标准操作流程(SOP)、配方档案及成本控制方案,确保食品安全、卫生规范及出品一致性;
  3. 组织面点团队排班、技能培训与绩效管理,指导员工规范操作,持续提升团队专业能力与协作效率;
  4. 配合厨师长完成菜单研发、季节性新品测试及宴会/大型活动面点保障任务;
  5. 严格执行食品安全生产管理制度,落实原料验收、储存、加工、留样等环节合规要求,配合各项食品安全检查。

  6. 具备5年以上中餐面点岗位工作经验,其中不少于2年面点班组管理或主厨助理经历;

  7. 熟练掌握传统中式面点及主流地方特色点心(如京式、广式、苏式等)的制作工艺与风味特点;
  8. 持有有效的健康证明,熟悉《食品安全法》《餐饮服务食品安全操作规范》等相关法规要求;
  9. 具备基础成本核算能力与团队管理经验,能独立组织培训、带教及质量督导;
  10. 具备良好的职业素养与沟通协调能力,无违法违纪记录,符合国家关于餐饮从业人员的通用录用条件。
