IHG Commissary Demi Chef De Partie 厨师领班(厨房供应) in Shenzhen, China

  1. 负责西厨房冷菜部门的日常出品管理与现场操作,确保沙拉、冷肉、奶酪拼盘、腌渍类及开胃小食等冷菜系列符合标准配方、食品安全及视觉呈现要求;
  2. 组织冷菜岗员工完成食材预处理、分装、冷藏储存、出品摆盘及台面清洁,严格执行HACCP关键控制点与温度管控规范;
  3. 管理冷菜间物料申领、库存盘点及损耗控制,定期核查保质期,杜绝过期或交叉污染风险;
  4. 协助厨师长开展冷菜新品研发、菜单更新及成本优化工作,参与内部品鉴与标准固化;
  5. 指导并监督下属员工规范操作,落实食品安全培训、设备使用安全及个人卫生管理。

  6. 具备五星级酒店或国际连锁餐饮企业西厨房冷菜岗位工作经验,其中至少1年承担带教或轮值领班职责;

  7. 精通西式冷菜制作工艺,熟悉常见冷切肉品、奶酪特性、酱汁调配及素食/无麸质等特殊需求菜品处理方法;
  8. 持有有效健康证明及食品安全管理人员考核合格证(或同等资质),熟知《食品安全法》及酒店食品安全管理体系要求;
