IHG Cold Dish Supervisor 冷菜主管 in Shenzhen, China

  1. 全面负责中厨房凉菜部门的日常运营管理;
  2. 主导凉菜菜品研发、标准化制定与质量管控,确保出品口味、规格、摆盘及食品安全符合企业标准;
  3. 严格执行国家食品安全法律法规及餐饮服务操作规范,落实原料验收、储存、加工、消毒、留样等全流程管理;

  4. 具备中餐厨房凉菜岗位工作经验;

  5. 熟练掌握中式凉菜主流工艺(如拌、卤、腌、腊、酱、冻等),具备菜品创新与标准化落地能力;
  6. 持有有效健康证明及餐饮行业相关资质证书(如食品安全管理员证、中式烹调师(高级)职业资格证等);
  7. 熟悉《中华人民共和国食品安全法》《餐饮服务食品安全操作规范》等法规要求,具备食品安全风险识别与应急处置能力;
  8. 具备良好的组织协调能力、团队管理意识和责任心,身心健康,能适应餐饮行业工作节奏与轮班安排。
