IHG Chef Butcher 肉房主管(粗加工) in Shenzhen, China

  1. 负责肉房日常运营管理,包括肉类原料的验收、分割、腌制、储存及损耗控制,确保符合食品安全与卫生标准;
  2. 制定并执行肉类加工计划,协同厨房团队完成菜单所需肉品供应,保障出品质量与时效;
  3. 管理肉房团队,开展岗位培训、排班调度与绩效指导,持续提升操作规范性与专业水平;
  4. 维护肉房设备与工作环境,落实HACCP及企业食品安全管理制度,定期开展自查与整改;
  5. 协同采购部门优化肉类供应链,参与成本分析与降本增效方案制定。

  6. 具备3年以上高端餐饮或星级酒店肉房管理经验,熟悉牛、羊、猪等主要畜类的部位分割、熟成及加工工艺;

  7. 持有有效的健康证明及食品从业人员培训合格证书,掌握《食品安全法》及相关操作规范;
  8. 具备基础英文读写能力,能准确理解进口肉品规格单、标签及技术文档;
  9. 具备团队管理能力与跨部门协作意识,责任心强,注重细节与食品安全;
  10. 年龄不限,无传染病病原携带限制,不以民族、性别、宗教信仰等作为录用条件。
