Allegheny Country Club Sous Chef (multiple positions) in Sewickley, Pennsylvania
Duties
- Assist the Executive Sous Chef in the supervision of staff, preparation of food and dishes, and ensure that quality and cost standards are followed and maintained.
- Support Executive Sous Chef in directing the day-to-day kitchen operations.
- Perform daily tasks for a la carte, private parties, and large format events.
- Oversee ala carte food production and banquet tasks, including checking AM/PM sets, expediting lunch and dinner, and providing staff meals.
- Develop menus for a la carte lunch, a la carte dinner and pool kitchen
- Execute set-up and service of special banquets and parties with the Executive Chef and ensure production needs are met.
- Assist with menu planning and ensure meal quality.
- Supervise and train employees in the main kitchen and pool, including providing menu and production checklists for AM/PM and pool cooks
- Ensure food and food storage protocols meet quality standards.
- Assist kitchen team members when help is required
- Approve quality and presentation of food coming off ala carte line.
- Ensure closing procedures and clean ups are properly completed.
- Assist with training of kitchen employees and completing monthly inventory.
- Oversee and manage the stewarding staff.
- Adhere to standardized recipe protocols.
- Act on behalf of the Executive Sous Chef and Executive Chef in their absence.
Requirements
1 year of experience as a Sous Chef or Line Cook, including banquet and line experience. Club experience and classical culinary training preferred.
