Job Title: Junior Sous Chef – Facility Quality Control & Compliance

Job Description

This temporary Junior Sous Chef – Facility Quality Control & Compliance role focuses exclusively on facility quality control, log verification, and food safety compliance across a high-volume kitchen operation. There is no cooking involved in this position. You ensure that labeling, temperatures, sanitation, and documentation meet strict standards so the facility remains audit-ready at all times. The initial assignment is for approximately 3–4 weeks, with the possibility of extension or conversion for the right fit.

Responsibilities

  • Inspect walk-in refrigerators, reach-in units, and freezers in accordance with standard operating procedures.

  • Verify that all items are properly labeled, covered, wrapped, and stored according to allergen separation and cardboard separation standards.

  • Identify expired, uncovered, or improperly stored items and notify management immediately for corrective action.

  • Ensure all clean items, including dishes and utensils, are stored correctly, kept dry, inverted, and free from contamination.

  • Confirm that sinks, walls, and surrounding areas remain free of debris, residue, and standing water.

  • Verify that floor drains are clean and that janitorial tools and supplies are stored in designated areas.

  • Check that required supplies such as dish pucks and sanitizer test strips are stocked, valid, and ready for use.

  • Confirm that all chemicals are stored safely and away from food contact surfaces to maintain a safe environment.

  • Review digital log records regularly to identify discrepancies or missing information.

  • Compare digital and paper logs to ensure accuracy, consistency, and compliance with food safety standards.

  • Document missing or incorrect entries, including dates, times, and initials, and escalate issues as needed.

  • Observe temperature-taking and logging processes to identify opportunities to improve accuracy and adherence to procedures.

  • Maintain strict adherence to use-by date policies and ensure documentation is complete and accurate.

  • Enforce standard operating procedures consistently and address instances of non-compliance in a professional manner.

  • Work independently to complete daily inspections and reporting while staying organized and detail-oriented.

Essential Skills

  • Strong attention to detail and consistency in applying food safety and quality control standards.

  • Experience in food safety, quality control, or kitchen operations.

  • Comfort enforcing standard operating procedures and identifying non-compliance.

  • Ability to work reliably, stay organized, and perform duties independently.

  • Previous experience in foodservice, food preparation, or kitchen environments such as line cook, prep, or dishwashing.

  • Customer service mindset when interacting with kitchen and facility staff.

  • Food service certification or equivalent food safety credential, where applicable.

  • Ability to operate effectively in a high-volume environment.

  • Eligibility and ability to obtain and maintain a T-badge for airport facility access.

  • Willingness to commit to at least a 4-week assignment, with potential for longer-term engagement.

Additional Skills & Qualifications

  • Background in roles such as chef, food prep, line cook, or similar foodservice positions.

  • Prior experience with log management, temperature monitoring, and documentation in a kitchen or production setting.

  • Familiarity with sanitation standards, dishwashing operations, and proper storage of chemicals and cleaning supplies.

  • Experience working in high-volume or fast-paced foodservice facilities is preferred.

  • Comfort using digital and paper-based systems for tracking food safety and quality control.

  • Ability to communicate clearly with team members and leadership about compliance issues and corrective actions.

  • Openness to potential long-term or conversion-to-hire opportunities based on performance and business needs.

Work Environment

The position is based at a major airport facility and operates within a large, high-volume kitchen environment that runs seven days a week. Coverage is needed across two primary shifts: Shift A from 6:00 AM to 2:30 PM and Shift B from 2:00 PM to 10:30 PM, with multiple team members assigned to each shift. You work in and around walk-ins, reach-ins, freezers, dish areas, and sanitation zones, regularly moving between storage areas and production spaces. The role involves frequent inspection of equipment, drains, sinks, and storage systems, as well as the use of digital and paper logs, sanitizer test strips, and standard cleaning supplies. You must be able to access secure airport areas, which requires a T-badge. The environment is fast-paced, with consistent noise and activity typical of a large commercial kitchen, and you collaborate closely with culinary, dish, and janitorial teams while maintaining a professional appearance suitable for an active foodservice facility. Free parking is available for team members working on-site.

This is a Contract position based out of San Francisco, CA.

Pay and Benefits

The pay range for this position is $33.00 - $33.00/hr.
