Clinical Dietitian – Open Rank – (Clinical) Faculty

We seek individuals with strong clinical expertise in nutrition and metabolic health and a demonstrated commitment to interprofessional, team-based education, experiential learning, student mentorship, and high-quality patient care. The successful candidate will play a central role in educating, precepting, and mentoring students across clinical and allied health professional programs within University of Utah Health student-led clinics. This is a full-time Clinical Dietitian faculty appointment in the Department of Nutrition and Integrative Physiology, a (Clinical) Track, Career-Line faculty position at the rank of Assistant Professor (Clinical), Associate Professor (Clinical), or Professor (Clinical), depending on experience.

Responsibilities:

  • Provide direct outpatient clinical nutrition care within interprofessional student-led clinics, including follow-up as appropriate, while supervising and mentoring students in patient-centered, culturally responsive practice.

  • Provide longitudinal mentoring to students across interprofessional health professional programs—including medicine (MD), dietetics, and other allied health disciplines—engaged in clinic-based learning, patient care, and scholarly or capstone projects related to nutrition and metabolic health.

  • Provide direct clinical precepting and supervision of students in student-led clinic settings, including real-time mentoring during patient encounters, case discussions, and care planning.

  • Demonstrate and promote the value of team-based, interdisciplinary care by modeling collaborative clinical practice within student-led clinics and educational settings.

  • Work collaboratively with the Director and faculty of the Coordinated Master’s Program in Dietetics and other faculty partners to support supervised practice experiences and alignment with educational competencies.

  • Serve on focused area of study and thesis committees, including as chair for projects related to clinical nutrition and patient-centered care.

  • Provide guest lectures and instructional sessions for health professional learners in areas of clinical and professional expertise, as needed.

  • Contribute to the design, coordination, and continuous improvement of clinic-based educational experiences, including consistency of training, learner evaluation, and quality improvement across student-led clinic sites.

  • Attend departmental meetings and functions as appropriate.

  • Represent the Department of Nutrition and Integrative Physiology and the University of Utah through professional service, community outreach, and engagement with relevant professional organizations.

  • Participate in the ongoing review and implementation of ACEND accreditation standards related to clinical training, knowledge, and competencies.

Minimum Qualifications:

  • Master of Science (MS) or Doctor of Philosophy (PhD) degree in Nutrition Science or a related field.

  • Credentialed as a Registered Dietitian Nutritionist ( RDN ) through the Commission on Dietetic Registration ( CDR ), with current State of Utah licensure or eligibility to obtain licensure within one month of employment.

  • Minimum of two years of outpatient clinical nutrition experience.

  • Demonstrated ability to collaborate effectively within multidisciplinary, team-based clinical environments.

Preferred Qualifications:

  • Established record of delivering high-quality, student-centered instruction, mentoring, or clinical precepting.

  • Demonstrated effectiveness in mentoring students or early-career health professionals.

  • Three to five years of inpatient and/or outpatient clinical nutrition experience.

  • Experience teaching or instructing in higher education or professional training programs.

  • Experience working with diverse patient populations and learners.

  • Experience leading engaging group-based nutrition education sessions.

  • Strong communication skills, with the ability to envision and implement educational or clinical innovations.

  • Fluency in Spanish or another language commonly spoken by patient populations served.
