As the Executive Sous Chef, you will assist the executive chef with running the operation for Remy/Enchante and ensure high standards of food quality and service when preparing dishes specially crafted by accomplished Michelin star chefs for our French-inspired luxury restaurants.
Responsibilities :
How You Will Make a Difference
Collaborate with the executive chef to plan and deliver menus
Ensure every food item leaving the kitchen is of the highest quality in flavor and presentation
Lead all aspects of the Remy/Enchante culinary team, including training and mentoring, while inspiring and encouraging them to get involved in menu creation
Oversee inventory and control costs
Act as a link between the kitchen and customers, while connecting with the Maitre d'Hotel and front-of-house team
Responsible for maintaining all applicable USPH and HACCP standards in the Remy/Enchante galley
Be responsible for the Remy/Enchante operation when the executive chef is not available
Basic Qualifications :
What You Will Bring to the Team
Five years or more of leadership experience with a minimum of two years working as a Sous Chef in a fine dining establishment
Must understand and be able to verbalize the fundamentals of cooking
Demonstrates a dedication to culinary career with a desire to grow within the industry
Must be proficient in all stations in the kitchen
Ability to work with a multi-cultural team in a confined environment
Proficiency in safe food handling, HACCP / USPH
Knowledge and proficiency in following and converting recipes
Preferred Qualifications:
How You Will Stand Out
Minimum of two-three years of formal culinary training
Prior ship experience
Additional Information :
This is a SHIPBOARD role.
You must:
Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel
Be willing to follow and perform safety role, emergency responsibilities, and associated responsibilities as specified in the ship Assembly Plan
Be willing to uphold the general safety management responsibilities as specified in the Safety Management System in areas and operations under their control
If applicable, be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment that has strict rules and regulations
Your Responsibilities:
Have a valid passport and C1/D Seaman's visa (DCL will provide you with documents to obtain this)
Complete a pre-employment medical
Obtain a criminal background check
Bring approved work shoes
