Sous Chef sought by VFMOGT, Inc. d/b/a Village Food Market in Ogunquit, ME to perform the following duties: The Sous Chef is a critical link between the Head Chef and the rest of the kitchen staff, ensuring that the kitchen operates efficiently and that high culinary standards are maintained.

  • Create and prepare daily dishes for the markets prepared food division.
  • Interact with potential catering clients.
  • Cook for various party sizes; ranging from 10-1000 people. (Must be able to work some of these events as the lead chef.)
  • Lead in Food Preparation and Cooking; prepare and present all dishes according to the VFM & H&P guidelines.
  • Kitchen Prep-work (cutting vegetables, preparing sauces, breakfast items (eggs mix, pan cake, home fires, bacon, fresh fruit & yogurt cups, just to name a few), Lunch items, all the salads, (Chicken, tuna, egg, seafood, lobster)
  • Ensuring your Caf line is stocked with all the necessary ingredients for them to serve 100-500 people per day.
  • Re-stocking the kitchen and workstations with necessary sanitation needs, gloves, back stock.
  • Manage inventory levels of ingredients and kitchen supplies. Place orders of ingredients and supplies, maintaining relationships with vendors. Planning what meats and seafood, vegetables are needed for the coming days daily.
  • Train prep-cooks and kitchen helpers the company standard practices: from how we cut our vegetables to what we trim and do to reduce overall waste of product.
  • Oversee the quality and consistency of the dishes served.
  • Monitor food preparation processes to ensure compliance and health and safety regulations.
  • Manage kitchen staff schedules, ensure adequate staffing levels for each shift.
  • Assist with budgeting and cost control.
  • Creating BEOs (banquet event orders)
  • Foster a positive and collaborative kitchen environment.
  • Work closely with the head chef and Manager on Duty to ensure a smooth working team.

Job Requirements: 1 year of experience in team leadership, cooking, and food handling.

1 year of experience must include:

  • Catering, restaurant management, or inventory control.
  • Hosting Banquets.
  • Supervising Catering teams.

Salary: \$ 48, 277.00 per year
