Position Summary

The Commis III – Pastry supports daily pastry kitchen operations by preparing and producing baked and pastry items in accordance with established recipes, food preparation checklists, and quality and presentation standards. This role ensures strict adherence to food safety, hygiene, and sanitation practices while maintaining consistency in portioning, quality, and presentation.

Key Responsibilities

  • Prepare and cook pastry and baked food items according to standard recipes, quality requirements, presentation standards, and food preparation checklists.

  • Prepare ingredients for pastry production, including portioning, chopping, measuring, mixing, and correctly storing food items prior to use.

  • Safely and appropriately operate baking and measuring tools, kitchen equipment, and appliances required to prepare pastry and baked goods.

  • Follow and ensure compliance with all food safety and food handling policies and procedures, including personal hygiene standards.

  • Check and ensure correct operating temperatures of ovens, refrigerators, freezers, and prepared food items; report any equipment malfunction or temperature variance to management.

  • Wash, disinfect, and maintain cleanliness of the kitchen and pastry work areas; properly set up and break down workstations following sanitation and cleaning procedures.

  • Monitor the quality, freshness, and consistency of pastry items prepared and portions served throughout the shift.

  • Follow all company policies and procedures, including safety and security guidelines; report accidents, injuries, or unsafe work conditions to the Manager and complete required safety training and certifications.

  • Maintain a clean and professional uniform and personal appearance at all times; safeguard confidential and proprietary information and protect company assets.

  • Perform other reasonable job-related duties as assigned by Supervisors or Management.

Qualifications & Experience

  • Certificate or Diploma in Bakery, Culinary Arts, or related field (preferred).

  • Basic knowledge of pastry preparation, baking techniques, portion control, and food presentation standards

  • Strong understanding of food safety, hygiene, and sanitation procedures.

  • Ability to work efficiently in a fast-paced, team-oriented kitchen environment.

  • Good communication skills and the ability to follow instructions accurately.

  • Physically fit and able to perform manual tasks for extended periods.

  • Must have legal working rights in Fiji.
