BAKERY COOK - JOB ORDER OF DUTIES

  1. Opening Prep and Bakery Production

Prepare and proof doughs for: Brioche donuts Croissants Danishes (berry; jalapeo and cheese) Artisan sourdough loaves Bake morning pastries: Croissants, donuts, danishes, cookies Mix and bake: Banana bread Chocolate chip cookies Slice, cool, and store pastries and breads for service. Begin daily sourdough batch: mix, fold, proof, bake when ready. Set up pastry display and replenish as needed.

2. Breakfast Service Prep

Prepare biscuit dough and bake fresh biscuits for Biscuits and Gravy. Make and hold breakfast gravy to temperature. Prep quiche: Whip custard mixture Prepare fillings Bake and portion Prep avocado items: Slice/hold avocado for toast and croissant add-ons Prepare sourdough slices for toasting Assemble and fire: Breakfast croissant sandwiches Avocado toast with toppings

  1. Lunch Service Prep

Prep Smash Burger station: Portion burger patties Slice toppings, prep sauces, grill mise en place Prep BLT components: Cook bacon Slice tomatoes Prep lettuce Hold toasted breads Prepare sandwich mise en place for sourdough sandwiches: Sliced sourdough Fillings (proteins, spreads, veggies) Set up hot line and cold line for smooth service.

4. Coffee Station Support (as needed)

Prepare syrups, garnishes, and any food items that accompany coffee service. Coordinate timing of food items with barista drink orders. Ensure pastry case is stocked to pair with coffee items.

  1. General Line Duties

Maintain clean prep and cook areas throughout service. Label and date all items prepared. Monitor inventory of pastry ingredients, breakfast/lunch proteins, breads, and produce. Communicate low-stock items to manager. Follow food safety and holding temp guidelines at all times.

6. Closing Duties

Cool, wrap, and store leftover items properly. Clean and sanitize all prep surfaces, equipment, and storage areas. Dispose of expired or low-quality items. Prepare next-day doughs or mise en place as scheduled.
