The Executive Chef is responsible for the overall leadership, management, and performance of all culinary operations across the hotel, including main kitchen, specialty kitchens, pastry, and stewarding. This role ensures the highest standards of food quality, hygiene, cost control, and team development, while delivering exceptional guest experiences in restaurants, banquets, and in-room dining.
What will I be doing? Position Summary (bullet points)
As the Executive Chef, you will be responsible for performing the following tasks to the highest standards:
·Direct and oversee all kitchen operations, including restaurants, banquets, main kitchen, pastry, and specialty kitchens.
·Ensure consistent delivery of high-quality food products in line with brand standards, recipes, and presentation guidelines.
·Develop, review, and implement menus based on seasonality, market trends, guest preferences, and business needs.
·Monitor food preparation, production flow, and service standards to ensure efficiency and timeliness.
·Lead innovation through new dishes, promotions, and culinary concepts.
·Enforce strict compliance with HACCP, food safety, hygiene, and sanitation standards.
·Conduct regular inspections of all kitchen areas to ensure cleanliness, maintenance, and proper food handling.
·Ensure all team members adhere to health, safety, and fire procedures.
·Manage food cost, waste control, and portioning to maximize profitability.
·Collaborate with Purchasing and Finance to control inventory, ordering, and cost fluctuations.
·Oversee payroll and scheduling to align with business levels and productivity targets.
·Ensure all recipes and costings are established, updated, and followed.
·Lead, mentor, and develop the culinary team, ensuring strong succession planning and capability building.
·Recruit, train, and evaluate team members in collaboration with Human Resources.
·Conduct regular training, daily briefings, and departmental meetings to maintain high performance and engagement.
·Foster a culture of teamwork, accountability, and continuous improvement.
·Work closely with the Director of Food & Beverage and other departments to align operational and business strategies.
·Coordinate with Events, Catering, and Conference Services for banquet planning and execution.
·Maintain effective communication with service teams to ensure seamless guest experiences.
·Engage with guests for feedback, special requests, and personalized dining experiences.
·Monitor daily operations, forecasts, occupancy, and event requirements to adjust production and staffing.
·Ensure proper use, maintenance, and replacement planning of kitchen equipment.
·Continuously review and improve SOPs, training materials, and operational processes.
·Support off-site catering and special events as required.

· Solid understanding of food safety standards and cost control practices.
· Strong leadership, communication, and organizational skills.
· Proficiency in English (written and spoken).
· Culinary degree or equivalent qualification preferred.
