Team Lead (Part-Time) - Smoke City Proz BBQ
Smoke City Proz BBQ is a faith-centered, family-owned BBQ company committed to excellence, integrity, and serving our community with authentic Texas flavor. We are seeking a dependable and motivated Team Lead to help oversee daily shift operations at our location operating on Naval Air Station Joint Reserve Base Fort Worth.
This role requires leadership, accountability, and the ability to maintain high standards in food quality and customer service.
Key Responsibilities:
Team Leadership:
Supervise and coordinate the activities of food preparation and serving staff during shifts. Lead by example and ensure smooth, efficient daily operations.
Training and Development:
Assist with training new hires and provide ongoing coaching to team members. Help foster a respectful, growth-oriented work environment.
Quality Assurance:
Monitor food preparation methods, portion sizes, presentation, and cleanliness to ensure high-quality standards are consistently met. Ensure compliance with health and safety regulations.
Inventory Management:
Monitor supply levels and communicate when items are running low. Conduct inventory checks and provide organized inventory lists for restocking and purchasing.
Customer Service:
Maintain a high level of customer satisfaction by addressing concerns professionally and ensuring a welcoming atmosphere.
Operational Efficiency:
Support efficient kitchen and service operations, especially during peak service times, and help maintain a well-organized workspace.
Additional Shift Lead Responsibilities (Operations and Sanitation Oversight)
Sanitation and Cleanliness Oversight
- Ensure all cleaning duties are completed thoroughly, including mopping floors, washing dishes, sanitizing prep areas, and maintaining a clean kitchen and service environment.
- Verify that opening and closing cleaning checklists are fully completed before team members leave.
- Inspect restrooms, dining areas, food truck areas, and kitchen stations to ensure company cleanliness standards are consistently met.
- Hold team members accountable for sanitation, organization, and food safety procedures.
Food Prep and Production Management
- Oversee daily and next-day food preparation to ensure readiness for service.
- Assign and monitor prep tasks such as chopping vegetables, seasoning meats, preparing sides, portioning ingredients, and sauce preparation.
- Ensure all prep is completed accurately according to company recipes and portion standards.
- Confirm prep levels meet projected sales volume to prevent shortages during peak hours.
- Ensure proper food storage, labeling, dating, and FIFO rotation procedures are followed at all times.
Closing and Next-Day Readiness
- Ensure kitchen, service, and prep areas are properly cleaned, stocked, and organized for the next business day or event.
- Confirm essential items (meats, sides, sauces, garnishes, beverages) are prepped or staged for efficient opening procedures.
- Report equipment issues, maintenance concerns, or supply shortages to management in a timely manner.
Qualifications:
- Proven experience in a supervisory or leadership role within the food service industry preferred
- Strong leadership skills with the ability to motivate and guide a team
- Excellent communication skills
- In-depth knowledge of food safety and sanitation standards
- Ability to work in a fast-paced environment and remain calm under pressure
- Strong organizational skills and attention to detail
- Reliable transportation and consistent punctuality required
- Must be able to pass a background check and obtain access credentials for Naval Air Station Joint Reserve Base Fort Worth
- Flexibility to work various shifts, including weekends
Physical Requirements:
- Ability to stand and walk for extended periods
- Ability to l ft and move up to 40 pounds
- Comfortable working in a kitchen environment with heat and equipment
