He leads his subordinates to perform their tasks to the highest professional standards and in accordance to the directives and instructions received by the Pastry Chef or the Assistant Pastry Chef. He carries out the service to the highest professional standards and in accordance to the instructions and guidelines received by his superiors.
What will I be doing? Position Summary
As the Pastry Chef de Partie, you will be responsible for performing the following tasks to the highest standards.
- Reports to the Assistant Pastry Chef in his absence to the Pastry Chef.
- Performs the tasks assigned to him in addition to all matters related to his field of activity and ensures their proper and timely implementation.
- Suggests and recommends steps and methods to maintain or improve the standards of production and quality.
- Exercises responsible management and behavior at all times, positively representing the hotel management team and Hilton Worldwide.
- Fully embraces and articulates Hilton philosophy and Double Tree by Hilton brand guidelines and policy.
- Follows the correct production procedures according to the recipes issued by the Pastry Chef.
- Prepares all ingredients for baking; measures and mixed ingredients according to recipe using cups, spoons and scale; bakes cakes in the oven.
- Prepares all kinds of pies and desserts according to recipes for all kitchen sub-sections.
- Prepares and cookies ingredients for pie fillings, puddings, custard and other desserts; pours fillings into pie shells.
- Mixes, kneads and shapes dough to make pies, cakes, cookies and other pastries.
- Prepares all à la carte and special desserts during service hours.
- Regulates thermostat controls of ovens and times all food stuffs being baked.
- Ensures proper handling of equipment, prevents loss and damage to assets and goods.
- Maintains his work environment clean and proper at all times.
- Ensures proper standards of sanitation and hygiene.
- Participates in the preparation of all baked goods, pastries and desserts in accordance with the established recipe cards and methods.
- Ensures that all baked goods, pastries and desserts are dispatched to Restaurants for service in accordance with established standards of presentation.
- Assists Pastry Chef in the performance of his duties including preparing requisitions to be sent to the outlets.
- Assists Pastry Chef in ensuring that production level of food required if consistent with need of hotel.
- Tastes on regular basis all baked goods, pastries and desserts to ensure correct taste.
- Prepares decorative center pieces.
- Assists in ensuring that portion control policy is adhered to.
- Ensures that all kitchen/restaurants outlets are supplied with their requirements.
- Ensures proper handling of equipment, prevents loss and damage to assets and goods.
- Maintains and ensures Pastry section clean and orderly fashion at all
- Abides to the standards of sanitation and hygiene.
- Ensures that all equipment and utensils in the outlets are correctly handled and maintained.
- Adopts “Clear as you Go” method of working.
- Displays good teamwork attitudes towards his colleagues.
- Assists in the on-the-job training of the pastry staff to maintain the highest standards of production.
- Supervises staff and takes responsibility for various functions, tasks etc.
- Trains commis, helpers, trainees with staff interaction and referral to inter department manuals.
- Participates in the activities of bakers.
- To attend training as set by the direction.
- Presents himself clean and proper in his job environment.
- Performs duties common to all supervisors and other duties as may be assigned.
- The working hours are in accordance with the established duty roster issued by the Pastry Chef. Extra duty hours are expected if required.
- To be compelled to wear the Chef’s uniform.
- Performances must be in abidance with the expectations defined in the job summary and as elaborated in the main duties.
What are we looking for?
APastry Chef de Partie,serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
- Education:High School, Preferred trade school certificate and or apprenticeship program which is recognized by national education board
- Experience:To have had at least 8 years minimum experience inclusive of training period: 2-3 years as a commis, 2-3 years as Demi Chef. Preferable exposure to bakery is a plus factor. Employee should have prior experience working in similar kitchen area to achieve Asst. Pastry Chef Prior experience as a CDP is not necessary but preferred
- Skills: Posses efficient technical abilities to function independent with his area of activity EG creams, mousses, sponges, piping, small and large equipment executed with a safe proficiency so as not to cause harm to self or colleagues
- Languages:Mother tongue and minimal amount of English requisite to the position according to the policy of the hotels
- To have worked in a pastry department which produces European cakes, pastries etc.
- Prior employment in a 5-star multinational hotel or qualified would be a benefit
- Responsible, interested, motivated, ambitious
- Strong skills to support and be the basis for the standard given by Chef
- Organizational and communication skills a must
- Understanding of pastry schedule and quantities based against house count and banquet requirements
