Position Overview
Thompson Austin is seeking a restaurant-driven Sous Chef to lead daily operations for Fifth Street Diner and Royale Room. This role requires a confident culinary leader who thrives in high-volume service, leads from the line, and builds strong systems to support consistency and execution.
Fifth Street Diner operates at 50–80 covers on weekdays and 150–300 covers on peak weekends. Royale Room averages 30–80 covers nightly. The ideal candidate is energized by this pace and takes pride in driving structured, organized, guest-focused service.
This position is designed as a stepping stone toward Chef de Cuisine within 1–2 years for the right individual.

Key Responsibilities
Service Leadership
Lead breakfast, lunch, and some dinner execution
Expedite during peak service periods
Maintain visible leadership presence on the line
Ensure excellent food quality, timing, and consistency
Support seamless BOH/FOH communication
Operational Ownership
Own ordering, inventory, and vendor communication
Manage weekly scheduling and labor alignment
Conduct monthly inventory and monitor food cost
Build and maintain pars and structured prep systems
Implement and monitor documented line check processes
Financial Accountability
Assist in managing food cost and waste reduction
Align staffing levels to forecasted volume
Maintain awareness of labor targets
Ensure proper use of Hyatt purchasing system
Team & Culture
Train, mentor, and hold cooks accountable
Participate in hiring and onboarding
Build a culture of urgency, pride, and professionalism
Model Hyatt values and Thompson brand standards
Create an environment where cooks grow and stay
Experience & Qualifications
Required:
1–2 years in a high-volume restaurant leadership roll
Experience leading breakfast/brunch service strongly preferred
Experience with ordering, inventory, and scheduling
Proven ability to expedite service confidently
Strong foundational understanding of cost control
Preferred:
Branded restaurant experience
Lifestyle hotel experience
Familiarity with Birchstreet or similar purchasing platforms
Experience in multi-outlet environments

Both hotels are anchored on the ground floor by our re-imagined cantina-themed restaurant, a 13,000 sq ft. indoor and outdoor oasis as well as The 5th Street Diner The Royale Room. a street-side concept serving daily fare for locals, residents, and guests alike. This mixed-use project will also feature a residential tower – Sienna – and 10,000 square feet of retail space and a 7,000 sq. ft. state of the art fitness center and simulator room, appropriately named the “T” Box.

Qualifications:
In-depth skills and knowledge of all kitchen operations
Possess strong leadership, communication, organization and relationship skills
Experience with training, basic financial management and customer service
Proficient in general computer knowledge
A true desire to exceed guest expectations in a fast paced customer service environment
Capable of producing a consistent product in a timely manner
Strong training and communication skills
Culinary education and/or on the job training, hotel experience preferred
Geographic and schedule flexibility preferred
